Antelope Guacamole Jalapeno Burgers 


Ingredients
1 lb ground antelope burger
1/2 cup breadcrumbs
1 egg
1 teaspoon garlic powder
1 teaspoon cumin powder
1/2 teaspoon chili powder
1/2 cup shredded cheddar cheese
4 slices Monterey Jack cheese
1 onion, sliced
1-2 jalapenos sliced (optional)
4 kaiser rolls or hamburger buns
Guacamole
2 avocados, peeled and roughly chopped
1 teaspoon kosher salt
1 teaspoon garlic powder
Add chopped avocados to a bowl and mash with a fork until semi-smooth. Add salt and garlic powder and mix together. Cover with plastic wrap and place in refrigerator until ready.


Burger Directions
In a large bowl add antelope burger, breadcrumbs, 1 egg, garlic powder, cumin powder and chili powder. Using your hands, gently mix together. Add shredded cheese and continue to mix with your hands until cheese is evenly distributed. Cover with plastic wrap and place in refrigerator for 30 minutes.
Remove the meat from the refrigerator. Now to get a perfect quarter pound burger, I divided the meat equally into 4 baseball sized balls and used my Weston Burger Press. I’m being totally honest when I say that I love this gadget for making the perfect sized patties. It makes a world of difference when you want to ensure that your burgers stay together and cook evenly.
After you are done forming your burger patties, place them on a hot and well seasoned grill. Grill for about 4-5 minutes then rotate and grill for another 4-5 minutes. Turn burgers and continue to cook on the other side until done. Top each one with a slice of Monterey Jack cheese and jalapenos.
Remove burgers from grill and garnish with guacamole and sliced onion. ~Enjoy!
